
Originally, I saw a video recipe on how to make homemade Samoa cookies and I was excited to make them!
Until, I realized I don't have the time to shape perfect little circle cookies, use a straw to cut out the middle of them, dunk them in chocolate and add a chocolate drizzle and so on. I need fast, efficient and tasty!
So I whipped out my food processor and gathered the ingredients.
- Coconut Flakes
- Dried Pitted Dates
- Mini Chocolate Chips
- Water

First:
Blend in Food Processor until easy to mold:
1 1/2 cups of dried pitted dates
1/2 cup (heaping) of coconut flakes
2 tbsp water
Pulse in:
1/4 cup (scant) of mini chocolate chips
Roll into balls and put on wax paper and store in fridge- qDone!
So much simple and easier and still get all the same yummy tastes!

*Recipe makes about 10 bite-size balls
